  • Tom Oliver

Tom Oliver was born and raised on the family farm in Herefordshire. Since 1998 Tom has split his time between tour managing & mixing sound for The Proclaimers and cider making.

Tom is an advocate of minimum intervention as the basis of his cider making philosophy. His ferments are all ambient by wild yeasts. Blending is done solely on the palate. Key for him is the joy and pleasure of cider both for refreshment and complexity and to accompany the finest of foods.

Over recent years Tom has been fascinated by co-ferments and has worked with some like-minded brewers to create some stunning hybrid drinks. "My two jobs have enabled me to travel the world, drinking cider and meeting makers, this has given me an inspiring insight into the world of cider and an overview that blends the traditions and heritage of the west country of the UK with the energy and inventiveness found in the USA and all around the world. There has never been so much worldwide energy poured into cider, it is up to all of us to build and populate the cider pyramid with great cider so that it can be enjoyed by everyone.”
