Always intrigued in the production processes and choices behind flavour in spirits, he began his role as UK Spirits Business Development Manager for WSET in 2016 in an aim to bring clear, unbiased and objective spirits education to the UK trade.     Henry Rymill is the Sales and Marketing Manager at Simpsons’ Wine Estate. Before joining the great team here at Simpsons’ he established and ran an independent wine merchant called the Wine Room in Whitstable Kent for 9 years. Prior to that he have owned a small vineyard in McLaren Vale, South Australia, worked in PR and has been a Sales and Marketing Manager for similar wine estates in South Australia such as Kangarilla Road and Wirra Wirra as well as Assistant Editor of the Australian and New Zealand Wine Industry Journal.

    Sarah has worked for Shepherd Neame, Britain's Oldest Brewer, for 10 years, working her way up through the Lab to Lab Manager and qualified Brewer. She is responsible for sensory analysis and quality of the products, and assists the Quality Manager in maintaining certification from various auditing bodies. Shepherd Neame brew over 40 different products for cask, keg, bottle and can, including contract brewing for international partners and own products for supermarkets. They have over 300 pubs & hotels within the South East of the UK and export to over 30 countries.

    Jacopo Mazzeo

    Jacopo Mazzeo can’t recall what kick-started his wild passion for beer and wine, but he’s sure in 2004 he was already supporting his studies at the University of Bologna by working with them. He finally realised that the drinks industry was his true love after his madness brought him to complete a PhD in musicology at the University of Southampton.

    Before he landed at Imbibe in 2018, he was head sommelier at The Pig Hotel in the New Forest. He is a professional beer sommelier and in 2016 he was awarded Young Beer Writer of the Year by the British Guild of Beer Writers.

Across nine books, his broad, fresh approach takes in social history, cultural commentary, travel writing, personal discovery and natural history, and his words are always delivered with the warmth and wit you’d expect from a great night down the pub. He writes for newspapers and magazines around the world and is a regular contributor to BBC Radio 4’s Food Programme. He was named British Beer Writer of the Year in 2009, 2012 and 2016, has won three Fortnum & Mason Food and Drink Awards, and has been shortlisted twice for the Andre Simon Awards. In 2020, he was named an "Industry Legend" in the Imbibe Personality of the Year Awards. Pete is Chair of the British Guild of Beer Writers. Craft: An Argument, is out now.

    Iain has done a lot in a relatively short space of time. In 2013 he opened up Panda & Sons (currently No. 77 in the World\'s 50 Best, 51-100 List). A couple of years later saw him open the playful Hoot The Redeemer to much acclaim. In 2017 he joined forces with Joe Russo, who is one half of the ‘Russo Brothers’ in opening a cocktail bar in the Arts District of Los Angeles. 2018 saw him team up with another Scottish bartending stalwart, Kyle Jamieson, in opening Nauticus which is all about championing Scottish produce and recently won pub of the year in the UK. Staff welfare is at the utmost importance to Iain and he has been proud to be paying his staff the real living wage.

    Sunny Hodge is the founder of Diogenes the Dog, a counterculture wine bar in Elephant and Castle, London. He aims to flip wine on its head, make a much loved beverage more accessible and tangible, by nurturing the underdogs and the unknown in wine. Importing from Texas, Poland, and featuring wines from as far a field as China and Japan. Sunnys ethos is all about service, training, and experience, stemming from a lifetime of experience in high end hospitality, in the likes of Gaucho, Margot and The Fordwich Arms.

    Michael Saunders

    Michael has spent over 37 years at the helm of Bibendum, building it into one of the UK’s most successful wine and spirits businesses. Having joined the business in 1982, Michael was responsible for founding Bibendum’s on-trade division in 1986, as well as its fine wine broking desk two years later. Under his tenure, Bibendum has grown to supply every channel of the UK trade, from contract catering to multiple grocers, via Michelin-starred restaurants and travel retail. Michael also became chairman of the Wine & Spirits Trade Association in 2019, and chairman of industry charity The Drinks Trust in the same year.

    Hailing from New Zealand, Heath has the hospitality industry in his DNA with both his Grandfather and Father both owning restaurants. In 2007, Heath acquired The Red Lion and Sun in London's Highgate. Under Heath's ownership, the pub was voted No. 10 in the UK's Best Gastro Pubs 2019 and The UK's Best Wine Pub in 2016 & 2018 and voted in The Times Top 25 Food Pubs 2017. However, perhaps Heath’s biggest achievement was in 2018 when The Red Lion and Sun won “Best Pub in the Country” at the Great British Pub Awards. In 2019, Heath was named Pub Personality of the Year by Imbibe...an award to this day he was shocked to receive...but not as shocked as his wife or staff.

    Victoria has been working in the wine industry for over 20 years; she is an expert in wine blending, cuvée selections, trend analysis and insights as well as being an engaging presenter and educator. Fro the past three years she has been the Head of Wine Operations at St JOHN, she is responsible for blending the St JOHN range as well as sourcing and maintaining an exclusively French portfolio. Prior to this she had established wine importing and distribution businesses in Australia and the UK and has worked closely with many wine producers.     Hannah Lanfear is one of the key Spirits Educators at the Wine & Spirit Education Trust in London and is also the founder of The Mixing Class, a company dedicated to education within the drinks industry with a focus on fostering diversity and socially responsible hiring practices. Clocking in at 21 years of service to the cocktail & spirits industry, her journey took her from a teenager pulling pints and pouring rum in a harbour-side tavern in Cornwall, to making fancy drinks for the cognoscenti in some of the world’s elite bars. She has managed and trained bar teams (Milk & Honey, Bungalow 8, Boisdale), passing down her skills from her mentors to her mentees; consulted on bar openings (Nimb Copenhagen, GloGlo’s); travelled the world as a global brand ambassador experiencing bar culture the globe over; as well as working for a distillery managing the sales, marketing and exports of a brand (Jensen’s Gin).
