Saicho, a new Berkshire-based start-up, is launching a range of sparkling cold brewed teas that pair well with food.  The drinks were developed so that those that choose not to drink alcohol can still enjoy the experience of food and drink pairings.  Three sparkling teas are being launched; Darjeeling which has notes of muscatel, nectarine and wood spice and pairs well with grilled meats; Jasmine which has a rich creaminess and delicate floral aroma and pairs well with creamy pasta; and Hojicha, a roasted green tea from Japan which has notes of seaweed, roast chestnuts and molasses and pairs well with Asian salads.
