Born in Rome, Italy, Pietro has been immersed in the restaurant industry since the age of 16. A graduate of the Culinary Institute of America, Pietro began his career as a cook at Roussillon, a classical French restaurant in the heart of London. Upon graduating in March 2009 he found himself working in the dining room at Eleven Madison Park. Within the first 2 years of his employment, Eleven Madison Park had received a 4-star review in the New York Times, 3 Michelin Stars, as well as a number of James Beard Awards including “Best Restaurant” and “Best Chef”. Whilst rising through the ranks, Pietro realized his fascination for wines and spirits and began pursuing his interests; firstly by receiving his certified Court of Master Sommelier certificate and assisting with the restaurant’s expansive beer list. He soon transitioned to the bar working under Leo Robitschek who was running the award winning program.

In 2014 Pietro joined The NoMad team as head bartender of The NoMad Bar, James Beard Award winner for “Outstanding Bar Program. The bar quickly gained recognition and was nominated at Tales of the Cocktail for “Best New Bar 2015”. 2016 saw Pietro become Bar Manager of the Hotel leading the team to win The Tales of the Cocktail "Best American Hotel Bar" and jump to #8 in the rankings of Worlds 50 Best Bars by Drinks International. In 2017 the NoMad was named “Best American Bar Team” at Tales of the Cocktail and was ranked Best Bar in North America and #3 in the World’s 50 Best Bars.

In 2018 Pietro became the East Coast Bar Director of “Make it Nice Hospitality”, responsible for running the bar programs at The NoMad Hotel NYC, Eleven Madison Park, and E.M.P. Summer House and Winter House. This year also saw NoMad take home “Best High Volume Cocktail Bar” at Tales of the Cocktail and Best Bar in North America for the second consecutive year. 

Pietro has also made his mark on the industry outside of the Make it Nice organization; participating in the CAP program at Tales of the Cocktail and completing BAR 5 day. He also won the National Sherry Cocktail Competition, was a finalist for the Heaven Hill Bartender of the Year and was featured in Food and Wine for Best New Mixologist.
