‘Los jimadores’ are men that love the land where blue agave is grown; from when they are children they go out to the fields with their fathers to learn and love this beautiful but difficult job.

If you go to an agave field in Jalisco, you will see them harvesting by hand, just as the generations before them did.

Jose’s grandfather was a jimador for Casa Herradura from 1925, and his father, Jesus, started working for Casa Herradura in 1950 when he was 15 years old, harvesting agave until he was 65. Jose is a third generation jimador, and the head jimador for Casa Herradura.
