Hidetsugo Ueno is the owner of the world-awarded Bar High Five, Ginza, Tokyo. He is known as an ice-carver of the signature diamond shape, a missionary of Japanese-style bartending and a world traveller; judging international cocktail competitions, training, presenting and making drinks.
Ueno began his bartending career in 1992 and is now one of the world’s best-known bartenders. He progressed through popular Tokyo spot Star Bar before opening his own establishment, which is now a Tokyo institution.
