Sullivan Doh has spent 11 years in the hospitality trade, eight of those behind the bar – mainly in Paris, with a few months spent in Sydney to experience another city. He came back to take part in the opening of Sherry Butt (Best French Cocktail Bar at Paris bar show Cocktails Spirits 2013) in 2012 and left in 2014 to focus on his first project, Le Syndicat – the first cocktail bar using only French alcohol, which opened in November 2014.
Frustrated by the fact that French people, including bartenders, don’t fully enjoy the richness of their locale, he decided to open a bar that would showcase the immense diversity France has to offer in terms of alcohol. It turned out that many others were interested in his mission, and Le Syndicat was a success, coming fourth in Best New International Cocktail Bar at Tales of the Cocktail 2015.
He loves to take his customers on an educational journey, so after two years, decided with his partners to open a second venue, La Commune. It sticks to the French spirits but flings its doors open to the world by using multiple spices and fruits through the concept of punches.He believes that in France, people have the wrong idea about this beverage, associated to French Caribbean islands – and that Paris was ready to discover the delicateness of a balanced punch. La Commune takes the historical father of cocktails and gives it a modern twist.
