Cider expert, Tom Oliver, has been announced as the Cider Ambassador for Imbibe Live 2017, the first in the show’s history. He will be creating a programme of expert led sessions and features aimed at on-trade buyers interested in cider.
Born and raised on the family farm in Herefordshire, since 1998 he has split his time between tour managing for The Proclaimers and cider making.
Oliver starts with harvesting the very best cider apples and perry pears he can get his hands on. Minimum intervention is the basis of his cider making philosophy and ferments are all ambient by wild yeasts. Blending is done solely on the palate. Key for him is the joy and pleasure of cider both for refreshment and complexity and to accompany the finest of foods.
‘My two jobs have enabled me to travel the world, drink cider and meeting makers, this has given me an inspiring insight into the world of cider and an overview that blends the traditions and heritage of the west country of the UK with the energy and inventiveness of the USA. There has never been so much worldwide energy poured into cider, it is up to all of us to build the cider pyramid’.
